The dichotomy discovered in food fires up the concept of Oficina. The respect with which a sardine and a truffle are brought together on the plate, the dignity applied to the cutting of a sprig of parsley or a shimeji mushroom. It’s tasted in the recreation of the nature of the ingredients and in the respect for their essence. It comes to life in the recognition of an extraordinary dish, sometimes for its clarity, sometimes for its complexity. How delightful is that emotion of, in one bite, destroy preconceptions and discover that it is possible to unite in food the dimensions that we all have within?

The craft we serve is about removing banality from simplicity with extraordinary flavours and original dishes. We live to give chickpeas, offal, or turnip greens the place of honor they deserve. The food is deliciously unpredictable, like the hidden salt stone in the chocolate mousse, or a sorbet as part of a main course. Bring on that sauce on the plate, to immerse the body until it finds the soul, because only in this way do we find the flavour of life, without ever knowing if we are the ones who season it or if it is life that seasons us.
